sweet summer!

Chase and I saw the cover of this "Better Homes & Gardens" magazine and decided we had to buy it to make the yummy looking strawberry peanut butter dessert. Brooke and I decided to make it for our Memorial Day dinner. It is super easy and delicious- Chase said it was definitely a repeat dessert! 



 
   
Fresh Strawberry Bars
PREP: 25 min. BAKE: 25 min. OVEN: 350 degrees
3/4 cup butter, soften
3/4 cup peanut butter
1 cup packed brown sugar
1/2 cup granulated sugar
2 tsp. baking powder
1/4 tsp. salt
2 eggs
1 tsp. vanilla 
(we used almond instead- highly recommended)
2 1/4 cups all- purpose flour
1/2 cup strawberry jam (we left this off)
4 cups small whole strawberries, halved or quartered

1. Heat oven 350 degrees. Line 13 X 9 inch baking pan with foil, extending foil beyond edges. Set aside.
2. Beat butter and peanut butter on medium to high for 30 sec. Beat in sugars, baking powder, and salt until combined. Add eggs &  vanilla (almond); beat until combined. Beat in flour.
3. Spread dough in prepared pan. Bake 25 min. or until top is lightly browned. (we baked it for 30 min., but next time I will probably do 35-40 min. 
4. Cool completely on rack. Remove from pan by lifting foil. Spread jam and top with berries. Cut into bars. Serve at once or refrigerate up to 6 hours. (you can also wrap the base in foil; store at room temp for 24 hours or freeze in a freezer container for up to 3 months!

yes actually we are coming the last weekend of june! we need to plan something!
